Apparantly Skirt is the cut that cornish pasties were origionally made with, its from the thin sheets of meat below the ribs. Skirt from our Dexter cattle is well marbled and has a great flavour when cooked slow. we usually supply this in short strips, but if you would like it in flat pieces just ask. In more commercial butcheries this cut often ends up as mince, but that seems such a waste.
