As Dexter cattle are about half the size of more conventional beef cattle so they have small but delicate fillet. For this reason we often supply the fillet as a single piece or a half, it can then either be treated as a small fillet roast (chateubriand) or can be cut by the customer into small chunky steaks or tornadoes. The meat is well marbled and incredibly tender.
